FOR MARTÍN Berasategui, the Basque chef who bagged his eighth Michelin star last year—the most of any chef in Spain—a recent revelation came in the form of a mud-caked beet. “It was a local variety I’d never seen before, called arróspide,” he said. “Absolutely magnificent, bright fuchsia and sweet like candy.” At his namesake restaurant in the small town of Lasarte-Oria, in the Basque Country of northern Spain, he coaxes a beet into six different preparations that could pass as sculptural art.
