WHEN British restaurateur Phil Winser moved from London to New York in 2007, he lacked the capital to open his own place. So he co-founded a catering company, Silkstone, which eventually drew clients like Rodarte and Alexander Wang and served as the precursor to the Lower East Side restaurant he co-owns, the Fat Radish.
